イスラム教 is the standard, everyday term. イスラーム is a more academic transliteration. 回教 is outdated and may carry historical baggage; avoid it in new writing unless referring to historical usage.
Japanese does not have a direct adjective 'Islamic'. Use イスラムの or イスラム教の before a noun. For example, 'Islamic law' is イスラム法 (イスラムほう).
