男女平等 (danjo byōdō) literally means 'equality between men and women' and is the traditional term. ジェンダー平等 (jendā byōdō) is a loanword from English and is often used in international or academic contexts to encompass a broader spectrum of gender identities beyond the binary. In most everyday situations, 男女平等 is sufficient and widely understood.
When discussing gender equality casually, you can simply say 男女平等が大事 (danjo byōdō ga daiji, 'gender equality is important'). For more formal discussions, you might use 男女共同参画 (danjo kyōdō sankaku) when referring to societal participation.
