営業時間 refers to the entire span of business hours. 開店時間 is the opening time, and 閉店時間 is the closing time. Use 営業時間 for general 'opening hours' and the others when you need to specify start or end.
営業時間は9時から17時です。開店時間は9時、閉店時間は17時です。
Opening hours are 9 to 5. Opening time is 9, closing time is 5.
While オープン (open) is used in Japanese, オープン時間 is not natural. Use 開店時間 or 営業時間 instead.
